Boursin Steak and Mushroom Orzo
A one-pan dinner that tastes far fancier than it is: skirt steak seared to a dark crust, then orzo simmered in the same pan with shallot, mushrooms and broth and stirred with cream and caramelized onion Boursin until silky, with the sliced steak laid on top.

Ingredients
Instructions
- 1
Heat a large skillet, preferably cast iron, over medium-high heat. Rub the steak with the olive oil, salt, pepper and paprika.
- 2
When the pan is very hot, sear the steak 5 minutes without moving it to build a crust. Flip and sear another 5 minutes, or to your liking. Remove and let it rest.
10 min - 3
Let the pan cool for a few minutes, then add the butter. When it melts, add the shallot.
- 4
When the shallot is sizzling, add the mushrooms and cook until they release their liquid.
- 5
Add the orzo and stir well. Add 1 1/2 cups of the broth and cook until the orzo is tender, adding more broth as needed.
- 6
Stir in the heavy cream, then the Boursin, stirring continuously until smooth and creamy. Taste and adjust the seasoning.
- 7
Slice the steak against the grain and lay it on top of the orzo. Sprinkle with fresh thyme if using.
