Instructions

  1. 1

Blend the cottage cheese in a blender or food processor until completely smooth, with no curds.

  2. 2

Make the dough: in a large bowl, combine the self rising flour, blended cottage cheese, salt, and garlic paste, and stir until a shaggy dough forms.

  3. 3

Knead on a lightly floured surface for about 1 to 2 minutes, until smooth and soft. It should be slightly tacky but not sticky; add a sprinkle of flour if it sticks.

  4. 4

Shape: divide the dough into 24 equal pieces and roll each out very thin, about 3.5 to 4 inches across. They expand once they hit the pan.

  5. 5

Heat the pan: preheat a cast iron or nonstick skillet over medium high heat and coat lightly with cooking spray.

  6. 6

Cook: cook one naan at a time for about 90 to 120 seconds, until large bubbles form and the bottom has golden or charred spots. Flip and cook 60 to 90 seconds more.

  7. 7

Keep warm: stack cooked naan under a towel while you cook the rest.
