Instructions
- 1
Make the sauce and salad first so they're ready when the pita comes off the heat. Mix the yogurt sauce ingredients in a small bowl. Toss the tomato, cucumber, parsley and red onion with the lemon juice, sumac, salt and pepper.
- 2
Smash the beef onto one side of the pita, pressing it into a thin, even layer all the way to the edges.
- 3
Season the meat with salt, pepper and garlic herb seasoning, and spray it with olive oil.
- 4
Cook meat side down. Heat a large frying pan over medium high and lightly spray it. Lay the pita in meat side down and press firmly with a spatula. Cook 3 to 4 minutes, until the beef is browned and cooked through, 160°F if you check it.
3 min - 5
Flip and cook the pita side 1 to 2 minutes, until warm and lightly crispy.
1 min - 6
Top and roll. Spread on the garlic yogurt sauce, then add the sumac salad, pickled turnips, extra sumac, parsley and a squeeze of lemon. Fold or roll it up.
