Vivaldi's Homemade Italian Salad Dressing

Chef Steve's close copy of the house dressing Vivaldi makes by the bucket, about 40 liters a week. Olive oil is cut with avocado oil so a big batch doesn't turn bitter, and whole garlic cloves give it a gentle garlic flavor that isn't overpowering. Everything gets shaken in one jar.

Instructions

  1. 1

Pour the olive oil and avocado oil into a mason jar.

  2. 2

Dip a teaspoon into the oil first, then measure in the Dijon. The coating stops it sticking to the spoon.

  3. 3

Drop in the whole garlic cloves, then the salt, pepper, oregano and the sugar or honey if you're using it.

  4. 4

Add the red wine vinegar. Steve forgot it at first and the dressing tasted flat without it.

  5. 5

Put the lid on and shake hard until it's combined. Taste and adjust.

  6. 6

Keep it in the fridge and shake it before every use.
