High-Protein Peanut Butter Mousse (Jen Joyce)
A creamy, high-protein peanut butter mousse made with just four ingredients and a food processor. Dry curd cottage cheese blends up thick and silky, and an optional thin chocolate shell on top gives it a satisfying crack. It makes a quick single-serving treat after dinner.
