Instructions

  1. 1

Blend the cottage cheese until smooth.

  2. 2

In a bowl, whisk together the blended cottage cheese, egg, sugar-free maple syrup and lemon zest.

  3. 3

Add the flour, baking powder, baking soda and salt. Mix until just combined.

  4. 4

Gently fold in the frozen blueberries.

  5. 5

Scoop and roll the dough into about 12 donut holes. If it is too sticky, add flour 1 tbsp at a time until it is workable.

  6. 6

Preheat the air fryer to 350°F, line the basket with parchment if you like and lightly spray it with cooking spray.

  7. 7

Air fry for 6 to 8 minutes, until lightly golden and cooked through. Work in batches if they don't all fit with space between them.

Let the donut holes cool. Whisk the powdered sugar, vanilla and milk into a smooth glaze, starting with 1 tbsp milk and adding more as needed.

  9. 9

Dip each donut hole in the glaze and sprinkle with a little extra lemon zest.
